I can't believe you're selling your Z! But, I wouldn't mind taking the B&B off your hands (though money will not be available for several weeks). As far as the rest goes - I'd pull the gauges w/ the pod leaving the wiring behind the pillar (leave the vacuum line for the boost gauge and disconnect it in the engine bay), then you can offer the gauges to the buyer for extra $$$ and have relative ease of hooking them back up. I'd recommend leaving the stereo in b/c most people will want to change it anyway, which will actually help you sell it that way. I dunno about the multi-checker, I'd say leave it in I s'pose.
